Apple Crisp

6 diced apples
2 cups oats
3 tablespoons sugar
1/2 cup flour
3 teaspoons cinnamon
1 stick butter
1/4 cup honey
1/2 cup apple juice
-----------------------
 1. Wash & dice apples. Sprinkle w/ sugar & cinnamon.
2. Combine oats, flour, sugar, cinnamon, butter, & honey.
3. Cover apples with dry mixture. 
4. Bake 380* covered 45 minutes. Remove foil, 
add 1/2 cup apple juice & bake 13 minutes.

Cranberry Orange Rice Pilaf
8 cups chicken broth
4 cups rice(1/2 brown)
1 diced sweet onion
1 cup craisins
2 oranges zested
1 orange juice
-------------------------
1. Cook rice according to directions.
2. Saute onions until translucent.
3. Add cranberries and orange zest, saute 2 minutes.
4. When rice is done combine with onion mix.

Take thawed chicken: dredge in flour, then eggs, then breadcrumbs.
Spray with oil cooking spray.
Bake 400* for 14 minutes.
 Remove from oven. Top each chicken breast with 1 T. pasta sauce,
a few slices of avocado, & mozzarella cheese. 
 Bake 400* for 8 minutes.

Melt together 1 stick unsalted butter & 12 oz semisweet chocolate chips.
Stir often to prevent burning. Allow 15 for melted chocolate to 
cool before adding it to cookie mixture.
 
Mix together in a bowl 1 1/2 C flour, 1/4 C unsweetened cocoa powder,
1 1/2 t. salt,1 1/4 C brown sugar, 3 eggs(room temp.),1 1/2 t. vanilla extract.
Beat for 2 minutes, then add melted chocolate. 
Refrigerate dough for 1 hour.
Use Tablespoon to make dough balls. Place on foil lined baking sheet. 
Bake at 325* 12 minutes.
Break 8 oz. semisweet chocolate bar into 1/2 inch squares & cut marshmallows in half.

 
Shave 1oz left over chocolate to top off fully baked cookies.
Place a chocolate square atop the cooked cookie & top with marshmallow half.
 Bake 325* for 4 more minutes.
Sprinkle chocolate shavings on top of cookies when they are
still hot{so they stick}.

Crock Pot Apple Cider



1/2 gallon apple juice
1 cup water
1 mini orange(sliced)
3 sticks of cinnamon

Cook on high until desired temp.
 Then lower to warm to serve.

Most delicious Deviled Eggs Ever



Boil a dozen eggs for 12 minutes. Once cooked drain and 
soak in cold water for 10 minutes. Then peel.

Slice egg length wise; placing eggs on a tray & yokes in a bowl.

Mash yokes until they are little crumbles.

Add 1 Tablespoon of each mayo, honey Dijon mustard, 
sweet relish & 1tsp hot chili sauce together. Salt, pepper & 
paprika. Adjust to taste.

Using a butter knife scoop in yoke mixture back into eggs. 
Sprinkle with paprika. I serve with a side of hot chili sauce.

Yesterday I was so so blessed to spend the day with my lovely friend Cori and some lovely girls from our playgroup/book club. We started out the day learning to be a little more domestic...from Mrs. Domestic extraordinaire-Cori. Which then was followed up with some Christmas crafty shopping. Oh so lovely.

Homemade Pie Crust w/ Quiche Filling
1 1/3 cup of flour
2 Tablespoons of sugar
1 1/2 sticks chilled butter (sliced)
2 pinches of salt


-mix these until butter is in little crumbles.


Add 3 tablespoons chilled water as you mold your dough into a ball


Once in a ball flour a cheesecloth and make your dough into a 2 inch
high flattened circle. Begin rolling it flat with a cheesecloth
covered rolling pin.


Begin rolling from the center out. Then back to the center and out again. Continue this until the dough is a little larger than your pie dish.

To get your crust into your dish you will begin at the edge and roll the crust onto the rolling pin until almost all of it is rolled up on the pin. Begin to unroll the crust once a side has been secured in the dish. Unroll slowly and allowing enough slack in the dough to fill in the whole baking dish.


Clean up the edges by pinching, braiding, or cutting off the extra.


To make the quiche we wix 3 eggs. Then add salt & pepper. 2 cups of cheese. 1 cup of milk or 1/2 & 1/2. And add any ham, onion, broccoli, etc. (anything extra you would normally like in a quiche). I just added broccoli.


Pour this filling into your crust. Bake 350 degrees for 40-45 minutes.

Dinner Tonight.

Spicy Chicken Soup


1. Thaw 4 boneless skinless chicken breasts. Once thawed, cut in 1/2 so they are thinner. Marinate in a sauce made up of 4 T soy sauce, 1 T hot chili sauce, 2 T sweet chili sauce, & 1 t minced garlic for apx. 1 hr.


2. Shred carrots to make 1 cup & thinly slice celery to make 1 cup. Add to 64 oz chicken stock to boil lightly for 30 minutes.
3. Sprinkle chicken with salt & pepper & grill{I use the george forman}. Slice thinly once cooked.
4. Once veggies are cooked enough to be soft add 2 T soy sauce, 1 T hot chili sauce & 1 T sweet chili sauce. Let Simmer.


5. Cook Top O Ramen noodles{5 packages} according to directions using chicken stock instead of water. 
6. DISH UP. Noodles on bottom, then veggie soup, & top with chicken & parsely. enjoy!!

**this is a very yummy meal, the soup saves and reheats very well, the noodles to do not though so you do need to make fresh noodles for the meal, but I make this soup and have Spence take it and add it to a cup of instant noodles for lunch at work**

Lunch, Dinner, Dessert.

Tonight I'm making a few meals at once....
Turkey Chili(dinner tonight)
1 Tbsp EVOO
1 lb ground turkey
1/2 salt & pepper
1 can (14 1/2oz) chicken broth
1 can (19oz) black beans
2 cups corn
1/2 rice
1/2 salsa
1 cup sweet onion-chopped
1 red pepper-chopped
Toppings: sour cream, salsa, & cilantro
Directions: Brown Turkey in EVOO. add peppers & onions, saute 3 minutes. add broth, salt, pepper, beans & corn cooked 15 minutes on medium heat. in a separate pot cook rice according to directions. once rise is done add to turkey mixture, then add salsa. continue to cook 10 minutes. pour into individual bowls, add sour cream, cilantro & salsa.
Quinoa Fiesta(lunch tomorrow)
1 cup quinoa
1 1/2 cup water
1 red pepper-chopped
1 yellow pepper-chopped
1 small yellow onion-chopped
1/2 cup dried cranberries
1 can yellow corn
1 can black beans
1 can diced basil tomatoes
1/2 cup sun dried tomatoes
1/2 Tbsp garlic salt
1 tsp Red pepper flakes
Directions: Bring water & quinoa to boil, lower to low-medium, let simmer until water has evaporated, fluff.  Saute on medium heat, peppers & onions for 5 minutes w/ EVOO. add beans, corn, tomatoes, & sun-dried tomatoes saute another 4 minutes, stir thoroughly. add dried cranberries, 1 minute. remove from heat. pour into large bowl, add garlic salt, red pepper flakes. ENJOY :)

Sugar Cookies(yum...yum)
..made from a box. Nothing too fancy here.
